General Manager
Kilian Werner is a culinary powerhouse with over 20 years of experience at Marriott International, where he has sharpened his skills in both cooking and leadership. His journey started in Germany with training at Frankfurt Marriott, then he advanced from junior sous chef in England to sous chef at JW Marriott Marquis in Dubai before becoming chef de cuisine. After roles in the Caribbean, he took the executive chef position at Sheraton New Orleans. In November 2023, he became General Manager of Bonny Moon in the Cayman Islands, successfully launching it in May 2024 as a celebrated destination for hospitality.
Restaurant & Bar Manager
Eder is the mastermind behind daily operations and the creative force shaping our cocktail program. Originally from Venezuela, Eder has worked over the years with prestigious luxury brands across South America and the Caribbean, establishing himself as a leader in the industry, recognized for his commitment to exceptional service and innovative cocktail creations. His unique and inventive cocktails have helped position Bonny Moon as a premier destination, offering an elevated blend of luxury and creativity to create an unforgettable dining and bar experience.
Executive Chef
Ayelen Esquef, originally from Argentina, grew up in a small town where she discovered her culinary passion through fishing and hunting with her uncle. This hands-on experience ignited her love for cooking as a way to spread joy. She refined her skills at Gato Dumas Culinary School in Rosario and has worked in various restaurant and hotel kitchens. Six years ago, Ayelen moved to Grand Cayman, where she now leads the culinary teams at both Ms. Piper's Kitchen & Garden and Bonny Moon Beach Club as Executive Chef.
